The table is all set, the folding chairs are unfolded and the turkey is almost done... Happy Thanksgiving to everyone and for all those cooking for family and friends this time of year, please allow me to point out some energy saving steps to help lower your energy costs.

Since 1982, I
have been answering questions about how to save energy and money when cooking and buying ovens. Below are just a few questions I will answer in this blog and in future postings.

Just cooked dinner? Bake your pie, cake or muffins now so that you don't have to pre-heat. This is the best time to do your baking while the oven is still hot and you are eating dinner.

To save some energy each time you cook or bake, use ceramic or glass that is approved for oven use. Ceramic will retain heat better than metal, thus allowing you to lower your cooking temperature as much as 25 degrees F and still cook the food in the same amount of time. Glass and Ceramic made for oven use come in all shapes and sizes. So baking brownies or cooking chicken cutlets is no problem.

What is the difference between
Convection ovens and Conventional ovens?

Convection Ovens use fans inside the ovens to circulate the heated air over the food and around the food. The black arrow in the photograph points to the fan in the rear of the oven. Convection ovens cook food faster and more evenly, thus saving up to 20% of the normal cooking time when compared to a Conventional oven. You may also find that recipes will cook just the same with the oven temperature up to 20 percent lower than normal suggested cooking temperature.

Conventional Ovens are traditionally found in most homes. Like Convection ovens, Conventional ovens use heat created by the consumption of gas or electricity. However, a Conventional oven can have the created heat blocked by pots and pans on the racks inside the oven. This can cause uneven cooking. Remember that heat rises, so foods on the top rack will cook faster.

Toys R Us vs Outdoors

I am amazed how companies with funds and available input from a significant staff can present something as if only one person "inside a box" worked on the project. Where is the team work, input, evaluations and intelligence.

I always said, "If you only do what you know and like, then you limit your knowledge."

Toys R Us went into the realm of ignorance. Yes, I am upset. This new 2013 promotion campaign I saw last month, immediately put a pit in my stomach and astonishment squelching my anger.

I take pride in teaching kids, teenagers and adults Outdoor Environmental Education. Everyone has a great time as we laugh, climb, build, swing, jump, explore, soar, discover, challenge, test, wonder, eat, and yes, even learn.

Yet, I guess none of this is known to the people who came up with this commercial that mocks our planet, our earth, our environment, and education as a whole, as being boring. Every teacher that works many hours to establish a field trip for the benefit of their students should be insulted. Every company that strives to bring their employees closer as a working team should point to this as "what not to do" in the business world.

Instead of sneering at Outdoor Education, (field trips are first to be cancelled when budget cuts come down) Toys R Us should be promoting Outdoor Education. The video is still up on YouTube: Lower Left is the Commercial, and the Lower Right shows Behind the Scenes of the Commercial, to add insult to injury.
If you choose to watch, please comment on the true closed-minded messages this ad represents. The messages are numerous, dwelling on consumption, toys more important than our environment, playing indoors with a game is more fun than playing with others outdoors, to name just a few that will be contrived by many.

In addition, if Toys R Us thinks spending a day in a toy store is more fun than playing outside, they are forgetting one major fact. Playing outside is FREE for the most part, spending a day in a toy store with little or no money and without a promise of a free toy, is depreciating to say the least.

To me, this commercial emphasizes that our children are being robbed by white collar crime. The ignorance of this major retailer that is supposed to care for the welfare, education and creative stimulation of children is appalling.

Food Labels Decoded, Country Of Origin

The label on the left states the following...
Country of origin: Farm Cattle, Born in Mexico, Raised and slaughtered in the United States.

COOL labels came about from the American law know as the 2002 Farm Bill. The law and the expansion version now requires retailers to provide country of origin labeling for fresh beef, pork, lamb, goat, chicken, wild and farm raised fish, fresh and frozen fruits, vegetables, nuts, and ginseng. However, excluded from the law are all processed meats and processed food. For example, if you buy a jar of Blueberry jam, you will not see a country of origin label for the fruit inside the jar. If you buy "cold-cuts" in a package, you will have no idea where the meat or meats came from.

Nevertheless, having information about what country certain fruit is coming from is very helpful when you want to avoid pesticides that are banned in the United States, but still used in a south American country.

In addition, please note that AMS (Agricultural Marketing Service) is responsible for administration and enforcement of COOL. AMS offers quality grade standards, grading, certification, auditing, inspection, and lab analysis. Industry pays for these services and they are voluntary.

Sandy's One Year Later Wake Up Call

As men, women, and children, still struggle to get some respite from the massive storm we named Sandy, we hope and pray that everyone will be doing better before this Thanksgiving Day, over one year later.

For the future, we must begin the process to identify the prevailing causes for this much destruction. On the political front, blame is quickly placed on Global Warming and man’s lack of effort to curtail this phenomena. On the financial front we have man’s complacent attitude that favors the status quo and increasing profits.

Before we can identify proper solutions, data must be collected, evaluated, and realized. Let’s start with what is given to us and what we take away.




Disrespecting God’s Green Earth:


Our green planet provides us with free protection from storms along the coast. However for some reason, we humans, think we know better. Mother Nature gives us Salt Marshes, Primary and Secondary Sand Dunes held together by vegetation such as

Marram grass, Lichen, or Bayberry. We look at a Salt Marsh with money in mind and so we fill in the Salt Marsh to build a football stadium. We drive dune buggies over the vegetation along the beach just for self satisfaction and build  where sand dunes once stood. We have failed to realize that a Salt Marsh filled with detritus is the “Super Market” for life in the ocean. If we fill in a Salt Marsh where fish lay eggs, then don’t wonder why there are less fish, because the food chain has already been disastrously affected and this is completely our fault. We build cities up to the edge of rivers and oceans. Then we argue over who should pay for the construction of natural and man-made protection.

Evaluating Sandy:

To qualify as a hurricane, the new May 15, 2012 Saffir-Simpson Scale shows a maximum sustained wind between 74 and 95 miles per hour (mph) with a storm surge of 4 to 5 feet above normal to be a Category One storm. Even though Sandy had circular rotation with an eye, the storm didn’t meet all the qualifications to be a hurricane. The larger than normal size, the wind gusts up to 90 or 95 mph and larger storm surge still doesn’t qualify, but none of that makes any difference to all those people who lost their house, their memories, their lives.

Now despite Sandy’s ranking, we had things far worst because, this was the first storm to hit at high tide and with a full moon. This was the main reason for a storm surge along the coast that had a wave height characteristic of a category three or four hurricane, not global warming. Nevertheless, with that said, that does not mean global warming is not real!

We also received help from nature when Sandy passed over us. The radar image showed the cold front that pulled Superstorm Sandy over New Jersey’s shoreline, also absorbed the storm’s circular motion and the back half of the Sandy dissipated. Instead of morning bringing us another day of high winds and rain, we had cloud cover with light rain and brief gusts of wind.

Old and Antiquated:

How complacent have we become that we tolerate zero protection along the water and an infrastructure that is 70 years old? Water pours onto the city streets to flood tunnels, parking garages, and basements of apartment complexes. We have power lines hanging like spaghetti from wood poles installed by Ma Bell in 1940. We disobey Mother Nature’s rules and then we use Global Warming to place fault. Next we claim we are shocked, shocked to find so much destruction, but we still all want to collect our winnings. Yes, like the lines in a classic movie, the root to all this is money. Profits or paying share holders all comes first before improving our infrastructure to save lives in the future.


Sandy was a “wake up” call. If a category five with sustained wind around 156 mph and a 18 foot storm surge hit New Jersey, New York City or Long Island head on, the damage will be complete. Roof failures will be wide spread and building failures will be common. Water from the Atlantic ocean may even reach Hempstead Turnpike at some points of Long Island, New York. Power would be out for 100% of Long Islanders with today’s current system and about four to five months would go by before everyone had electric power again.

Realizing Solutions:

New York City’s study and report for a stronger and more resilient coastal edge was well done. However, key areas of New York City need additional ten foot high naturally decorated berms with walkways and benches on top of the current 10 foot, 2 inch high edge. Since eighteen foot storm surges come with Category Five storms, twenty feet should be the minimum. Building along the edge of land is far cheaper than building a causeway with gates out in the harbor which would offer little protection. Think about all the water on the harbor side of those expensive gates. The 150 mph wind will be blowing all the water on both sides of those gates and all that water inside the harbor will still come up onto the streets of New York City.

Salt Marshes, Primary and Secondary Sand dunes with a catch basin area between the two, has to be recreated by man along the beaches. Nature gave us these protections for free and we filled them in or we plowed them under. Boardwalks must be incorporated into the natural protection of Primary Sand dunes and we cannot leave openings in our first line of defense. We can no longer ignore what nature has taught us for the sake of an ocean view.

Long Island, New York City and New Jersey need to start sealing wires underground over the next twenty years. This should be done systematically for the main roads as they are repaved or repaired. Then with priority businesses on the main roads not losing power, repair crews will be able to attend to downed neighborhood lines that much faster. Wood poles should be replaced with stronger poles like the ones used in Florida, where the lines can’t be placed underground due to the water table just a few feet below the surface. Since these types of upgrades have been spoken about for decades, but never ratified because of the claim that cost is unaffordable, a true comparison by an outside firm should be done against the costs to make twenty years of hurricane repairs.

I am presenting this request because of the understanding I received on sealing power lines underground when I worked for an electric utility. The following may stand true:

Burying power lines is too expensive for the power company when they have to use their own profits to do the work instead of profits going to share holders.

When a hurricane hits and significant repairs are needed, about every ten years in the Northeast, assistance and repair money comes from the government. Yes, us tax payers, thus it is cheaper to do repairs with tax payer’s dollars instead of burying power lines with their own profits. Thus, no more tax payer bailouts for repair costs. Power companies will have to establish a fund with their own profits for repairs. Immediately you will find twenty years of hurricane repairs is much more expensive than burying power lines along main roads. Also I am not opposed to the government reimbursing a utility for burying power lines equal to the repair amount provided for an average storm. This will be done only once after all the main roads that can host buried power lines have been completed.

We also have to better understand global warming and stop the assumptions from both camps. Both sides believe they have all the data, I believe we just opened the book and finished the introduction. Yes, there are risks. I choose to error on the side of caution. Nevertheless, realize that whatever we do to help our world from a serious global warming problem, that will not stop us from being hammered by hurricanes. They are part of our planet’s nature, so we cannot do one solution for global warming and ignore dealing with the infrastructure problems. We have to stop fighting over money and work together as one team. We must start protecting lives before the next storm. It is already too late for the victims of Sandy.
